Plan to Succeed


Is anyone else glad to see summer come to an end and watch the kids head back to school?  This summer has just blown by and has been full of fun with friends and family.  We have been so busy that blogging took a major back seat.  I am pretty eager to share about some of our adventures this summer though, so stay tuned for that!

I have been continuing to work on getting back into shape and losing weight.  During my vacation last month I actually lost 5 pounds!  What a nice surprise considering I enjoyed all of the local fare I could find.  

After five weeks of not running (having the kids home makes that task so much more difficult!) I started back up again.  Currently, the plan is to run a mile a day.  Today was day 5 and my time is improving!  


So while some things are helping, one thing I noticed as I read blogs and talked to others who have lost weight, the one thing that fit people tend to have in common is that they plan out their meals.  And not just write them down, but prep, cook and store their weekly meals.  This may be the one thing that boosts my efforts in a positive way.  Yesterday, I sat down and wrote out a meal plan - breakfast, lunch, dinner and snacks - and went to the store to purchase the items I needed.  Then I came home, nursed Baby B to sleep, and set to work.

I do shakes/smoothies twice a day and eat every 3-3.5 hours to keep my metabolism up.  Keeping that in mind, here is my plan:

Meal 1 (7:30 am): shake

Meal 2 (11:00am): M-W Sweet potatoes, asparagus, and turkey meatballs
                                 T-Sun: Brown rice with chicken, red bell pepper and pineapple

Meal 3 (2:30): shake

Meal 4 (6:00 pm): M-Th: Veggie Burger with a salad
                               Fri-Sun: Grilled chicken with brown rice and green beans

Meal 5 (9:00pm): M-W: Blackberries with almonds
                              Th-Su: Greek yogurt with banana slices, flax seed and agave nectar. 

First thing you should do is make sure your counters are clean and clear and that you have all of the containers you will need.  Wash all of your produce and make sure meat is thawed.  I also like to do all of the veggie chopping first and get everything in little prep bowls so that I feel cool like chefs on TV ;)



The first thing I made was the asparagus.  All I do is mix a bowl of lemon juice, olive oil, lemon pepper, fresh garlic, and pepper in a prep bowl.  I spread the asparagus out on a foil-lined baking tray, drizzle the sauce over them, shake the pan to coat each spear, and pop them in the oven at 400 degrees for 12 minutes.  Easy!


I also start cooking my rice at this point.  After the asparagus is done I move them to a plate and start the sweet potatoes.  For these, I diced them and followed this easy and delicious recipe.  Baby B even gobbled a few up before I packaged them up.


Here is the sweet and spicy chicken I love to make.  You can find the recipe here. I omitted the tortilla and served it over brown rice.




For my turkey meatballs, I mixed together a pound of ground turkey, 1/4 bread crumbs, 2 tbsp diced onion, 1 egg white, and added cilantro, red pepper flakes, and cayenne pepper to taste.   rolled them into 18 (that's how many I was able to make) meatballs  and baked them at 350 degrees for 20 minutes.

The quickest part was prepping the snacks.  I tossed a handful of berries and almonds into some cups for one.  The other was a serving of yogurt topped with sliced banana, a spoonfool of flax seed and a drizzle of agave nectar.  




I also whipped up some protein balls.  I used 3/4 cups oats, a scoop of chocolate protein powder, 2 egg whites, 2 tbsp dark chocolate chips, 2 tbsp Skippy Natural Peanut Butter and mixed everything together.  I formed them into 8 balls.  These of course, must stay in the fridge to stay good.

A few things I am missing from my photos - I also made some pizza veggie burgers that I found at Trader Joes and stored those in a container for easy reheating.  Today I will finish my last set of meals which will be the grilled chicken strips and green beans and add them to my leftover rice.

That is it!  Everything included, this all took me about 3 hours and now all of my meals are ready for the week!

Sweet & Spicy Chicken Wrap




I LOVE mixing flavors and textures!  When Taco Bell came out with the Cheesy Gordita Crunch, I was in love....soft and crunchy?!  When chocolate covers bacon, I want to run away with it to the alter.  Food is great, isn't it?

Unfortunately, food makes me fat when I cannot step away so I am always looking out for ways to eat delicious meals that won't compromise my waistline.  The other day in my kitchen, I was playing around with ingredients and stumbled upon this delicious (and HEALTHY) lunch.  The best part?  It was pretty quick to make and under 300 calories.

You will see the picture of my ingredients and you may wonder why the photo shows a spinach wrap, when my wrap CLEARLY is not green.  Well folks, even the best of us forget to read labels.  The spinach wrap is a whopping 210 calories.  While that is fine and dandy when I am spreading hummus on it and wrapping up a little lunch meat, it is not great for this particular recipe when the goal is to keep calories low.



So I opted to swap it out for a regular tortilla which was 170 calories.  An even better option would be a low-carb or whole wheat tortilla or wrap, but I wasn't about to run out to the store for this one thing.

First I seasoned my chicken breast with Cajun seasoning, Garlic & Herb seasoning mix, and coconut aminos.  I sprayed my pan with some coconut oil and let it brown.


Meanwhile...I used my little cast iron pan (these things are kitchen ESSENTIALS!) to cook up the diced pineapple and red bell pepper.  You can leave the bell pepper in larger chunks if you want, but I can only handle them when they are small.



Once they are cooked and peppers have a nice crunch to them, add the Siracha and spicy mustard and combine.  The first time I made this, I was a bit heavy handed with the Siracha - my nose was running it was so hot!  Even with just a tablespoon, you get a nice kick. 

About this time, the chicken should be about done.  Dice it up and toss it in with the pineapple and pepper mix.  Now all you have to do is roll it up in your tortilla and wrap and enjoy!  Grab a napkin; this meal can get messy!

Ingredients: 
1 chicken breast
Cajun seasoning to taste
Garlic & Herb seasoning to taste
1 tbsp coconut aminos
1/3 cup diced red bell pepper
2/3 cup diced pineapple
1 tbsp spicy brown mustard
1 tbsp Siracha

{365} Challenge: Try a New Activity



Today's Challenge: Try a New Activity

Part of my birthday bucket list, and partly because I am working on getting fit - I am trying to find new activities that I can attempt.

Thanks to the suggestion of my friend, Christina, I woke up early (okay, normal time, but still early in the day) and headed off to try babywearing yoga with my babywearing group.  I have done yoga, maybe twice, ever.  It's not really my thing.  Originally I thought yoga was about stretching and feeling relaxed, but a quickly learned it is about getting deep stretches that hurt and give you an amazing workout.  I am not knocking the activity or those who do it, but it was not as fun as I imagined.

Even so, I figured I would give this variation of yoga a try and see how it went.  Despite my daughter giving up after 20 minutes, I did get some great stretching and relaxation in.  Baby B was pretty good and spent the time playing in front of me.  I would say this was a win.



Babywearing yoga allows parents an opportunity to bond with their baby in a relaxing environment.  Babies are continually monitored so that they are safe and secure.  It is very important to check and recheck the carrier during the class.  In our class we were able to do warrior pose, tree, and some other stretches that I never learned the names of.  Typical me!

{365} Challenges: Start Running Again


Today's Challenge: Start Running Again
After scoring the BOB jogging stroller, the message was clear:  I MUST start running again.  Plus, summer is coming and my sons have season passes, thanks to the grandparents, to the local water park.  That means I will have to put on a swimsuit and supervise them there this summer.  Time is running out!  No pun intended.


Today I packed the BOB into the Jeep, along with 2/3 of my kids and Micah the dog and we headed to the trail for a little jog.  The weather was so nice, we even found a spot along the creek to stop and let the dog and Older Boy splash around a bit.  Baby B dipped her toes in, but I was too busy holding her to take a photo.  She loved it!



We completed about 2.5 miles and ran most of the time.  I would say that is a good start for having not run in a few years!  Now to make it a regular habit :)

Lunch: 2 Buffalo Chicken rolls and a salad
Snack: handful of cashews


Tuesday
Breakfast: 1 slice of whole wheat toast with 2 tbsp. peanut butter
Snack: Handful of raisins 
Lunch: Spinach wrap with ham (Spinach wrap, 2 slices black forest ham, 2 tbsp. shredded cheese, 1 tbsp. red pepper hummus, and whatever veggies you want to stuff in!)
Snack: Banana
Dinner: Bacon-Avocado Grilled Cheese sandwiches - I am subbing cheddar for Havarti cheese and using turkey bacon and whole wheat bread.


Wednesday
Breakfast: Lean eggs and ham with a banana
Snack: Lara Bar
Snack: 1 cup carrots and 2 tbsp. Red Pepper Hummus
Dinner: Chicken, Spinach, and Ricotta Quesadillas - make a freeze multiples for lunches


Thursday
Breakfast: 3 Chicken Breakfast sausages (Trader Joe's) and 2 eggs
Snack: string cheese and a yogurt
Lunch: Clean Crockpot turkey chili (You should have some left from last week)


Friday
Breakfast: 
Snack:  cup carrots and 2 tbsp. red pepper hummus
Lunch: Chicken, Spinach, and Ricotta Quesadillas (leftovers from Wednesday dinner)
Snack: Apple with 2 tbsp. Almond butter
Dinner: Almond Crusted Chicken Fingers with 2 cups broccoli


Saturday


Sunday
Breakfast: Superfood Smoothie
Snack: Handful of raisins
Lunch: baked sweet potato and a salad
Snack: Peanut Butter Banana Balls - should have some from last week leftover

{365} Challenge: April Meal Plan



Baseball continues this month, along with MommyCon, visiting family, Easter, and egg hunts! It will be a busy, but hopefully fun, month.  I am working on a 6 week clean-eating plan so my meals were planned around that.  These will coincide with that challenge. 

Making this month more difficult, due to budgeting and trying to save money, I had to cancel my gym membership for a few months.  This means that I really have to focus on healthy eating and staying motivated and active to get my desired results.

{365} Challenge: Full-Day Meal Planning




This Friday will be 7 months since Baby B was born.  Since she was 3 weeks old I have not dropped a pound.  Not one.  If you have been in my shoes then you can understand how frustrating it is to not fit back into your cute clothes and be around skinny friends (especially other moms!)

I tried eating Paleo, but it didn't have an impact on my weight while breastfeeding so I am heading back to the drawing board.  For me, I need to feel full and satisfied after a meal and have room to enjoy a sweet every now and then.

At the start of my pregnancy, I weighed 173 lbs.  At the end of my pregnancy I was at 210 lbs.  It took 3 weeks to drop to 189 lbs. and that is where I have stayed.  Before this pregnancy, I was fit, active, and fairly pleased with how I looked.  My goal was (and is) to get back down to around 145 lbs. and start doing weightlifting competitions.  Lifting weights makes me happy and it is one of the few times I am truly proud of my accomplishments.  Before my pregnancy I maxed at 210 lbs for back squat; more recently when tested, I squatted 185 lbs.  My goal by the end of this year is 270 lbs.

So to re-cap, my goals:
Get down to 145 lbs.
Squat 270 lbs.
fit back into my cute clothes
-and-
get back into running


For the past 6 months I have been depressed with my looks at it has been effecting how I view myself as well as my relationship with my husband.  It isn't fair to him or me.  This is it.  Last straw.  Last chance.  I have found that eating smaller, more filling meals has been more helpful.  The past few days I have been focusing on snacking healthier and getting in a good breakfast and lunch.  

The tricky is part is two-fold: I am nursing and I am in my 30's with my third child.  The plan is to breastfeed as long as possible, hopefully till at least 2 years, but longer if my body allows it and Baby B wants it.

I am working on a 6-week goal - planning every meal for 6 weeks and trying to keep them clean.  Here is week one.

Monday
Breakfast: 3 scrambled eggs and a banana
Snack: Lara Bar
Lunch:Turkey Wrap (Whole wheat toritilla, 2 tbsp. Red Pepper Hummus, 4 oz. sliced turkey, and spinach leaves)
Snack: String cheese
Dinner: Grilled chicken with pasta and a side salad


Tuesday
Breakfast: 1 slice of whole wheat toast with 2 tbsp. peanut butter
Snack: a handful of raisins
Lunch: Leftover pasta from the night before
Snack: yogurt - I prefer Noosa 
Dinner: Almond Crusted Chicken Fingers with 2 cups broccoli


Wednesday
Breakfast: 2 eggs (scrambled or over-medium) and 3 chicken breakfast sausages from Trader Joe's
Snack: Lara Bar
Lunch: Black bean and cheese burrito (Make several and freeze)
Snack: string cheese and a handful of cashews
Dinner: Veggie Burger with a side salad


Thursday
Snack: Lara Bar
Lunch: Baked sweet potato and a salad
Snack: 1 cup baby carrots and 3 tbsp. Red Pepper Hummus
Dinner: Lemon Chicken with brown rice and asparagus


Friday
Snack: handful of raisins
Lunch: Spinach wrap with ham (Spinach wrap, 2 slices black forest ham, 2 tbsp. shredded cheese, 1 tbsp. red pepper hummus, and whatever veggies you want to stuff in!)
Snack: yogurt


Saturday
Breakfast: 3 eggs and a banana
Snack: 1 cup baby carrots and 3 tbsp. Red Pepper Hummus
Lunch: Sandwich and an apple (2 slices whole wheat bread, 4 oz. turkey breast, 1/4th avocado, and 1 tbsp deli mustard)
Snack: 1 banana and 1 string cheese
Dinner:Beast Meatloaf and a side salad


Sunday
Breakfast:  1 slice of whole wheat toast with 2 tbsp. peanut butter
Snack: Lara Bar
Snack: string cheese
Dinner: Whole wheat penne with chicken in sun-dried tomato sauce

{365} Challenge: Skinny Plate Challenge



Today's Challenge: Skinny Plate Challenge

As I peruse the pages of Pinterest looking for healthy recipes and motivation for losing the baby weight, often I am directed to blogs of the super fit mamas.  More often than not, they started out skinny and lost the weight quickly.  That can be really frustrating and and depressing for us mamas who struggle day after day after month to shed those pounds post-baby.

Where are my mamas who were not super skinny when they conceived?  What about the mamas who are STILL struggling with losing that weight (whether it has been 3 months, 6 months, a year, or two or more?)  What do YOU do to stay on track despite the lack of movement on the scale or measuring tape?

My weight loss journey isn't fast.  It isn't perfect (I love chocolate!)  My journey has realistic struggles and frustrating plateaus as I try to balance breastfeeding, circuit training, weight lifting, and healthy eating.  I am just an ordinary mom of three who wants to confidently wear a bathing suit this summer without resorting to pills, shakes, or "get-skinny-in-2-weeks" schemes.

In an effort to eat better and trim my body, I am doing the Skinny Plate Challenge.   The guidelines are:

1. Meals are eaten off of a salad plate (about 7")
2. Portions cannot be larger than your palm.
3. No more than three portions on your plate.  These must not be crammed on your plate, but fit comfortably on it.  This means chicken, rice, and a veggie; or chicken and two veggies - but no fourth or fifth options - no rolls!  
4.  Dessert counts as one of those three portions.
5. Eat as many plate-fuls as you normally would during the day (so, 3-6 meals a day.)  Because I am breastfeeding, I will be aiming for 6 small meals.
6.  Drinks do not count, but soup does.
7.  You can still have 2 small snacks a day.  Think a handful of nuts, a Lara Bar, carrots and hummus, etc.

That's it!  This is all about portion control, training my mind and body to eat more reasonable servings.
