Yummy Sunday Morning

Today was one of those mornings where cereal or pancakes just wouldn't do.  I wanted something hot and filling and decided to make a go of what I had on hand in the fridge. So today I bring you, a Sausage, Potato and Egg casserole.

Ingredients: 
1/2 bag of southern-style hash browns
1 lb. of sausage
1/2 an onion, diced
1 cup cheese
3 eggs
1 cup milk
dash of Cayenne pepper
Directions:
* Preheat your oven to 350 degrees.
1. Start cooking potatoes per package directions.  Mine took about 15 minutes to cook, which is why you want to start this first.
2.  Brown the sausage and add the onion and cook until meat is cooked through and onions are translucent.  

3.  Mix together the sausage mix, potatoes, and cheese and put the mixture into a lightly greased baking dish. 
4.  Beat the eggs, milk, and Cayenne pepper.  Pour over top of the sausage and potato  mixture.

5.  Bake for 40 minutes in the oven.
6.  Enjoy!


My kids were resistant at first to this dish (on principle I think), but after tasting it, they enjoyed it.
