Plan to Succeed
Is anyone else glad to see summer come to an end and watch the kids head back to school? This summer has just blown by and has been full of fun with friends and family. We have been so busy that blogging took a major back seat. I am pretty eager to share about some of our adventures this summer though, so stay tuned for that!
I have been continuing to work on getting back into shape and losing weight. During my vacation last month I actually lost 5 pounds! What a nice surprise considering I enjoyed all of the local fare I could find.
After five weeks of not running (having the kids home makes that task so much more difficult!) I started back up again. Currently, the plan is to run a mile a day. Today was day 5 and my time is improving!
So while some things are helping, one thing I noticed as I read blogs and talked to others who have lost weight, the one thing that fit people tend to have in common is that they plan out their meals. And not just write them down, but prep, cook and store their weekly meals. This may be the one thing that boosts my efforts in a positive way. Yesterday, I sat down and wrote out a meal plan - breakfast, lunch, dinner and snacks - and went to the store to purchase the items I needed. Then I came home, nursed Baby B to sleep, and set to work.
I do shakes/smoothies twice a day and eat every 3-3.5 hours to keep my metabolism up. Keeping that in mind, here is my plan:
Meal 1 (7:30 am): shake
Meal 2 (11:00am): M-W Sweet potatoes, asparagus, and turkey meatballs
T-Sun: Brown rice with chicken, red bell pepper and pineapple
Meal 3 (2:30): shake
Meal 4 (6:00 pm): M-Th: Veggie Burger with a salad
Fri-Sun: Grilled chicken with brown rice and green beans
Meal 5 (9:00pm): M-W: Blackberries with almonds
Th-Su: Greek yogurt with banana slices, flax seed and agave nectar.
First thing you should do is make sure your counters are clean and clear and that you have all of the containers you will need. Wash all of your produce and make sure meat is thawed. I also like to do all of the veggie chopping first and get everything in little prep bowls so that I feel cool like chefs on TV ;)
The first thing I made was the asparagus. All I do is mix a bowl of lemon juice, olive oil, lemon pepper, fresh garlic, and pepper in a prep bowl. I spread the asparagus out on a foil-lined baking tray, drizzle the sauce over them, shake the pan to coat each spear, and pop them in the oven at 400 degrees for 12 minutes. Easy!
I also start cooking my rice at this point. After the asparagus is done I move them to a plate and start the sweet potatoes. For these, I diced them and followed this easy and delicious recipe. Baby B even gobbled a few up before I packaged them up.
Here is the sweet and spicy chicken I love to make. You can find the recipe here. I omitted the tortilla and served it over brown rice.
For my turkey meatballs, I mixed together a pound of ground turkey, 1/4 bread crumbs, 2 tbsp diced onion, 1 egg white, and added cilantro, red pepper flakes, and cayenne pepper to taste. rolled them into 18 (that's how many I was able to make) meatballs and baked them at 350 degrees for 20 minutes.
The quickest part was prepping the snacks. I tossed a handful of berries and almonds into some cups for one. The other was a serving of yogurt topped with sliced banana, a spoonfool of flax seed and a drizzle of agave nectar.
I also whipped up some protein balls. I used 3/4 cups oats, a scoop of chocolate protein powder, 2 egg whites, 2 tbsp dark chocolate chips, 2 tbsp Skippy Natural Peanut Butter and mixed everything together. I formed them into 8 balls. These of course, must stay in the fridge to stay good.
A few things I am missing from my photos - I also made some pizza veggie burgers that I found at Trader Joes and stored those in a container for easy reheating. Today I will finish my last set of meals which will be the grilled chicken strips and green beans and add them to my leftover rice.
That is it! Everything included, this all took me about 3 hours and now all of my meals are ready for the week!

{365} Challenge: Create our Summer Bucket List
School is out in 4 days, well, 3 days and a couple of hours. This year, the boys have season passes to the local water park, so hopefully that will quell some of the boredom around the house. Inevitably though, there will be days when we just need to do something else.
Not only do we have plans to hang out with friends to swim, bowl, skate, and play, but I have been working on my own set of plans for the kids. We scheduled the free summer movies into our calendar, they have summer camp, we want to do a yard sale, and then there is a huge surprise party for my husband's grandpa who is turning 80 this week! I also have a few themed movie nights in the works. Stay tuned!

Today's Challenge: Organize the Cords
A few years ago I went to the Alameda Antique Faire (amazing!) with a friend and found this great little vintage luggage piece. I didn't know what to use it for at the time, but it eventually became a great spot for storing the cords we use for our electronics. However, this little box has become a nest that any bird would be grateful to lay an egg in.
Saturday's are baseball days which means that I need the phone and camcorder charged to capture the moments and I do not have spare time to hunt down the chargers. It was time to tackle this task.
In all honesty, this took less than 10 minutes, which makes it worse that I have put it off. I grabbed some plastic baggies and labeled them with what the cords belong to. Then I neatly stacked them in the box, with the extension cord that we use most often on top.
I actually feel better having accomplished this menial task.

{365} Challenge: March Meal Plan
Sorry for the delay! In the past week Baby B has turned 6 months, started crawling, and had her first tooth break through. Time has been moving quickly and I completely forgot to create the meal plan.
This month also kicks off baseball season in our home. That puts us out of the house and at baseball games and practices most nights of the week. In order to avoid eating out a bunch, relying on my crock pot and fast meals becomes an art form. My focus with my menu planning this month is to keep it quick! This coming Sunday I will be working on prepping most of the meals that can be frozen so they are even quicker to make come the night I am serving them.
Go Royal Blue Rangers!
3/1: Buffalo chicken sandwiches (4 chicken breasts, a bottle of Frank's Red Hot Buffalo sauce, and a packet of Ranch dressing seasoning in the crock pot on high for 5 hours, then shred!)
3/2: Oscar Night! Appetizers for dinner: BBQ meatballs, fresh veggies, hummus and crackers, and of course, "Red Carpet" Red velvet cookies!
3/3: Tonight is Bunco night, which meant that my mom babysat and brought the kids dinner.
3/4: Did you know today is National Pancake day?! I will be making Potato Pancakes with applesauce
3/5: Slow Cooker Moo Shu Pork with fresh asparagus
3/6: Another rainy day in the forecast, so we will be warming up with Chicken Tortilla Soup, topped with avocado.
3/7: Lemon Pepper chicken with a salad
3/8: We will be super busy with Opening Day Ceremonies and a birthday party today so this recipe is great because I can prep it the night before and let it cook while we are out most of the day. Slow Cooker Apple BBQ Burgers.
3/9: Breakfast for dinner night!
3/10: Sour Cream and Bacon Chicken. Bacon is always delicious!
3/11: Taco night!
3/12: Beef and Barley Stew (I still have some made that needs to be eaten)
3/13: Teriyaki Honey Chicken (multiply and freeze!)

3/15: Chicken Ranch Ranchero over rice
3/16: Crock Pot Lasagna
3/17: St. Patrick's Day and date night! We are going to go to a pub for dinner and green beer; kids will get their request.
3/18: Baked potato "bar"
3/19: Buttermilk Chicken Breasts (Multiply and freeze)
3/20: Santa Fe Soup
3/21: Sausage and pasta
3/22: Grilled Bruschetta Chicken
3/23: Homemade pizza night
3/24: Italian Flank Steak pinwheels - another recipe to multiply and freeze.
3/25: Chicken Taco Melts
3/26: Bacon Mac n Cheese - just like it sounds! Crumble bacon and mix in to mac n cheese.
3/27: Fried chicken (a Paleo version to keep it healthy with coconut oil and almond flour)
3/28: Chicken bacon sandwiches - an easy to fix to take to the ball fields!
3/29: Ham and Potato pockets - make a bunch and freeze for later!
3/30: Nachos in the cast iron skillet
3/31: Grilled sausage and asparagus

{365} Challenge: Buy Enough for a Month
Today's Challenge: Buy Enough for a Month
We have a Costco membership because we can get some great deals on food for our growing family. While not everything is a great deal, there is plenty there for us to get some bang for our buck and fill our tummies with good (not always the healthiest) food.
One of my bad habits though, is making several trips out there in a month. I seem to go every week for eggs and other must-have items. Not only does this waste my time, but it wastes gas and then I often end up eating more samples (oh, so tempting...extra calories that I do not need) and buying items that I normally wouldn't. Don't tempt me VitaMix!
So, on Monday I went out to Costco as usual, but with one major change - I took a list that was double my normal list!
My "Stock-up" List:
- 2 bags of frozen chicken breasts (these are great, especially for quick, crock-pot meals)
- 5 dozen eggs (we eat a ton of eggs in our home and this is cheaper than 2 of the 24-packs)
- tortillas (at just over $2 for 30 tortillas, this is a great deal and we use them for breakfast burritos and taco nights.
- 2 packs of Spicy sausage (my hubby loves these for breakfast - sliced and mixed with eggs)
- dish soap (one giant bottle of dish soap lasts us MONTHS!)
- 36 pack of bottled water (with California in a drought, I pick up a case each time I go to Costco, to set aside in case of emergency.
- meat (I buy the big packs of meat and separate them and freeze them into "family-size" portions.
-Produce, lots of produce.
